Cheesy Prawn Pasta
Ingrdients
1 L water1 tsp salt
1/2 chicken stock cube, divided into 2
2 cups if elbow pasta (macaroni)
1 tbsp oil
4 rashers bacon
10 prawns, peeled and deveined and cut inot 1.5cm pieces
20g butter
20g plain flour
1 cup milk
1/2 cup water
30g grated cheddar cheese
30g grated parmesan cheese
- Place water, salt and hald of the chicken stock cube in a large sucepan and bring to a rolling boil. Add pasta and cook for six minutes. Drain pasta under running warer till completely cool. Set aside.
- Place a heavy bottom saucepan over medium heat. Add oil and bacon and fry till crispy. Remove bacon and set aside.
- Add prawns to the same pan and fry till just cooked. abt a min, remove and set aside.
- Add butter to the same pan and allow it to melt. Add the flour and stir so that a smooth mixyre forms.
- Add the milk, alittle at a time, whisking to prevent lumps forming, Then add the water and the remaining hald of the chicken stock cube and sir until the mixture starts to boil and thicken, abt 8 min.
- Add the cheese (reserve some to sprinkle on top) and stir again, until the cheeses have melted, Taste and add salt if necessary, remove from heat and set aside.
- Preheat oven to 190 deg
- Add the pasta, bacon and prawns to the cheese mixture and stir so that everything is evenly coated. transfer to a baking dish and sprinkle over the reserved grated cheeses. Bake for 15 min, or unitl golden and bubbly.
