Apple Pie

Ingredient

Crust
200g plain flour
100g butter
1 tsp salt

Filling
3 red apples
Raw sugar
1 tsp of cinnamon powder
1 tbsp lemon juice

1) sift the flour and salt, rub the butter into the flour. Save a bowl of crumb for topping.
2) Add a tbsp of water to bind the dough. Store the dough in the fridge for 1 hr.
3) Core and remove the skin of the apple, thinly slice the apples.
4) Line the dough on the pie tin.
5) Mixed cinnamon powder, 3 tbsp of Raw sugar with slices apple.
6) Line the apple slices on top if the tin.
7) Add 1.5 tbsp of sugar to the bowl of crumble.
8) spread the crumble on top of the fillings.
9) bake the pie in the pre heat the oven for 200 degree.

茶叶蛋

I went 裕华国货 and saw the 茶叶蛋 flavouring pack and decided to make it tonight. With the Thermo pot, I can leave it around for 1hour and took it out to rest overnight. It should be very flavour able tmr morning and will just nice for breakfast.

I left 12 初生蛋 that I got last weekend not refridged cos I wanted it not too fresh for easy peeling. 12 is not going to be enough for the family of four.

Making for it is easy, just follow the instruction on the back of the box and u wun get wrong. My house will smell of the spices to night that will make us 流口水一枕夜。

Cheesy prawn pasta

Cheesy Prawn Pasta

Ingrdients

1 L water
1 tsp salt
1/2 chicken stock cube, divided into 2
2 cups if elbow pasta (macaroni)
1 tbsp oil
4 rashers bacon
10 prawns, peeled and deveined and cut inot 1.5cm pieces
20g butter
20g plain flour
1 cup milk
1/2 cup water
30g grated cheddar cheese
30g grated parmesan cheese

  1. Place water, salt and hald of the chicken stock cube in a large sucepan and bring to a rolling boil. Add pasta and cook for six minutes. Drain pasta under running warer till completely cool. Set aside.
  2. Place a heavy bottom saucepan over medium heat. Add oil and bacon and fry till crispy. Remove bacon and set aside.
  3. Add prawns to the same pan and fry till just cooked. abt a min, remove and set aside.
  4. Add butter to the same pan and allow it to melt. Add the flour and stir so that a smooth mixyre forms.
  5. Add the milk, alittle at a time, whisking to prevent lumps forming, Then add the water and the remaining hald of the chicken stock cube and sir until the mixture starts to boil and thicken, abt 8 min.
  6. Add the cheese (reserve some to sprinkle on top) and stir again, until the cheeses have melted, Taste and add salt if necessary, remove from heat and set aside.
  7. Preheat oven to 190 deg
  8. Add the pasta, bacon and prawns to the cheese mixture and stir so that everything is evenly coated. transfer to a baking dish and sprinkle over the reserved grated cheeses. Bake for 15 min, or unitl golden and bubbly.

Homemade Marshmallow

Homemade Marshmallow

Ingredient

  • 1 big egg - Only need the egg white
  • 1 cup sugar
  • 1 cup corn syrup
  • 180ml water - 60ml + 120ml
  • 1 tbsp unflavour gelatin
Flavouring
  • Strawberry - Strawberry Jam
  • Chocolate - Cocoa powder
  • Vanilla - Organic Vanilla extract
Equipment
  • Electric Whisk
  • Candy thermometer
  • Cake tin

Method
  1. In a bowl, mix 60ml water and gelatin, set aside.'
  2. In the saucepan, mix sugar, corn syrup, 120ml together and cook over fire. Stir the sugary solution till the sugar melted completed then stop stirring. Place the candy thermometerin the sauceplan to monitor the temperature of the solution.
  3. When the sugar solution reached 118 deg, start whipping the egg white.
  4. Using water bath method, place a big bowl with hot water and place the water + gelatin on top of the hot water to dissolve the gelation solution.
  5. Whipped the egg white till foamy and firm (do not over whisk)
  6. When the sugary solution reached 127 deg. remove it from the heat. Add the gelation solution and stir well.

魔鬼鱼炒酸菜

魔鬼鱼炒酸菜

Ingredient

  • 500g stingray fish
  • 200g Sour pickle vegetable
  • 2 tomatoes - into 4s
  • 2 chilli - Julien
  • 2 chilli padi
  • 4 slices of ginger
  • 1 tbsp garlic
  • spring onion
  • oil
Seasoning
  • 1/2 tbsp Chicken powder
  • 1/2 tbsp sugar
  • 100ml stock
 
Method:
 
1) Wash the stingray, add salt and pepper to marinate and pan-fry the stingray till cooked.
2) In another wok, stir fry the ginger, garlic and chilli
3) Add in the pickle vegetable and stir fry for 3 min
4) add in the tomatoes, chilli padi and fish.
5) Add stock and simmer till boil, seasoned with salt and chicken powder
